How to enhance your beef roast with flavoursome rubs

Add extra flavour with very little effort to your beef roast with these delicious ideas. Rubs can add the zest of herbs or garlic, or the complexity of spices to a beef roast. The meat absorbs the essential oils from the spices and herbs giving it a subtle flavour.

Why not start out with a favourite seasoning or a ready-made spice and herb mix from the supermarket. Ready-made spice and herb mixes, like Lemon and Garlic, Moroccan spice or Tuscan herbs or even Steak Seasoning make easy, tasty rubs for a beef roast. Check out the supermarket shelves  you’ll find lots to choose from.

 

Flavoursome rubs for beef


These flavoursome rubs are all especially good for beef. Quantities of each ingredient can vary, you can make a rub up to suit your taste. You’ll need about 1/4 of a cup of rub mixture for per 1kg of beef roast.

Rosemary, thyme and lemon

Rub the roast with a mix of salt, pepper and chopped fresh rosemary and thyme leaves and grated lemon rind before roasting. You can also very this rub with fresh thyme and oregano leaves or crushed garlic cloves, grated orange rind and chopped sage leaves.

Mustard, orange and honey

Rub the roast with a mix of salt, pepper and a little seeded mustard or Dijon mustard and dried mixed herbs before roasting.

Peppercorns and garlic

Make a peppercorn rub; drain a small can of green peppercorns, crush the peppercorns lightly. Combine with 2 cloves crushed garlic and about 60g slightly crushed dried black peppercorns. Rub the roast with oil and spread the peppercorn mix over the meat before roasting. For a little variety you could also try adding a little ground cumin or ground coriander or dried oregano to the peppercorn mix if you like.

Easy steps to roasting


Step 1  Brush the beef lightly with oil.

Step 2  Gently massage the rub all over the beef roast so it can stick to the meat. Use enough pressure so it sticks evenly to the beef. It can be rubbed into the roast just before cooking or it can be rubbed on the meat for several hours before cooking for a more intense flavour.

Step 3  Place the beef roast on a rack in the roasting dish. To keep it moist, add a little water to the roasting dish.

Step 4  Preheat the oven and cook in line with the type of beef cut you are roasting.
