Quick and easy beef curries

Curries, like all richly flavoured casseroles, can taste even better the next day as their flavour mellows beautifully. Place the hot curry into a shallow container and then into the fridge so it cools quickly. Reheat it so the meat and sauce are both thoroughly hot.
